Greetings! New to the group and RVing in general. On our maiden voyage, we noticed that we are getting really hot water from the cold faucet and mildly warm from the hot. The cold eventually runs cold but it takes a few minutes. Any suggestions on what to check?

Welcome to the forum A lack of hot usually indicates a water heater bypass (winterizing) not being properly set. Your problem, a lack of proper temps wither way usually indicates that the valves for the outside sink or shower are open and allowing an imbalance at the faucets inside.
