We are new RVers and our GDRV has a single solar panel meant to provide power to the battery for the fridge while in transit. I'm trying to find out if any of the outlets would work while on battery so we can reun a dehumidifier while we arent using the unit. Anyone know?

Welcome to the forum! I would think not, that would require an inverter. Your rig probably has a 12V fridge that runs off the battery, and the solar panel serves to help recharge the battery. You might have "inverter prep" which would be a piece of 10AWG Romex wire run from a breaker out of your panel marked "Inverter" to the passthrough and then back into a breaker marked "Inverter". The breaker panel actually has the right three breakers on a sub panel and is designed such that if you install an inverter those circuits would run off the battery through the inverter. Usually one of those breakers is at least some of your outlets.
A brief warning on your single solar panel. Some are shipping with 165 watt panels and some are shipping with 300 watt panels. While you are driving the charge from the truck plus either of those panels should keep up with the fridge, but in a site with no hookups if you are in the shade (particularly the 165 watt) some have found to be inadequate to run the fridge for more than a day or two. That obviously completely depends on your usage, but is something to keep in mind.
