I haven't seen it in person, but the first thing that caught my eye is the ease to access to the bathroom and refrigerator when on the road (rest stop lunch break, etc). That's an important feature (for my DW and I).

The limited counter space for meal prep would likely be an issue, too. (Again, for how my DW and I use our space.)
A small slideout in the rear (for a wardrobe) would have been nice, too. I'm not sure we could carry all of our clothes in the space provided. (We carry a lot of "stuff"....)

I really like that floorplan. That's a pretty big bathroom, and I like the door access to it. My only concern would be that some of the heavier items and storage are behind the axle. You'd need to carefully load it to keep at least 10% of the weight of the trailer on the hitch. If you load the rear too heavily, it could become unstable. Other than that - great floorplan.
