Below is a shot from when I installed a Winegard on my 315RLTS. (The trailer originally had a King "batwing" antenna.) Note that the Winegard has a specific orientation and there are a lot of slots for screws. I'd investigate the original installation by carefully removing all the sealant.
Also--may be obvious--but removing all the moisture from the ceiling is of critical importance before mold sets in. All the wet insulation must come out and air must be circulated up in that area. As you've seen, one of the few (easy) ways to access the roof space is by dropping the interior lights. Perhaps when inspecting the Winegard's installation consider removing it completely and doing a thorough inspection along with removal of all wet insulation and ensuring the ceiling area is dry.
